Snow Soup with Porcini Mushrooms

INGREDIENTS
60g butter
2 large onions
1 large granny smith apple
2 stalks celery
2 potatoes
4 cups chicken stock
1 t sugar
1 t salt
1 cup cream
½ cup porcini mushrooms
chives to garnish

METHOD
Chop vegetables finely. Place in pot with stock and seasoning. Cook til tender and place in blender with porcini mushrooms. Add cream, check seasoning and garnished with chopped chives.

Serves 6
